Satisfy your taste buds and nourish your body with Turkey Falafel Burgers, a creative and healthy twist on traditional falafel. These flavorful patties combine fresh herbs, chickpeas, garlic, ground turkey, and Mediterranean spices. The tangy lemon-tahini-herb aioli adds richness and nutrients. With lean turkey and fiber-rich chickpeas, this dish offers a satisfying protein source.

Serves 4-6

  1. Dice the cucumbers and tomatoes, and finely dice the red onion into a medium bowl.
  2. Add chopped fresh parsley, and dried mint to the salad.
  3. Add fresh lemon juice, salt and pepper and mix to combine.
  4. Next, drizzle the olive oil over the salad and give it a final toss.
  5. Taste again for salt and pepper.
  6. Serve immediately

Lemon-Tahini-Herb Aioli

Directions

  1. Gather all your fresh herbs and give them a rough chop (the food processor will do the rest).
  2. Bring a small pot of water to a boil, add then add the baking soda, salt, and the can of chickpeas.
  3. Make the lemon-tahini-herb aioli by combining the mayonnaise with lemon juice, tahini, herbs, salt, and pepper. Whisk until combined.
  4. In a food processor, first blend the garlic with the onion. Then add the fresh herbs a little at a time until finely processed.
  5. Drain your chickpeas and add those to the food processor. Open the lid and press down everything so it all mixes evenly.
  6. Make a quick spice blend with the turmeric, garlic powder, cumin, salt, and pepper and add it to the food processor.
  7. Next, add the ground turkey to the processor, and a little bit more of the spice mixture.
  8. Add the juice of ½ a lemon to the food processor and blend until combined.
  9. Form the falafel turkey burgers into 5 oz round patties by hand.
  10. Refrigerate them for 15 minutes.
  11. While they’re chilling, slice some tomatoes and onions for the burgers as well.
  12. Preheat a pan to medium high heat.
  13. Add extra virgin olive oil to the pan and begin to pan sear the turkey burgers for approximately 3-4 minutes on each side or until golden brown and completely cooked through in the middle.
  14. Toast your brioche buns and begin to layer them with amazing flavors!
  15. First, top your buns with the delicious lemon-tahini-herb aioli.
  16. Next, place some butter lettuce on the bottom of the sauced bun.
  17. Add the falafel turkey burger next, then the tomato and onions. Top it with the other sauced bun and slice in half.
  18. The vibrant colors that look like falafel are mesmerizing! The flavors are even better. Get ready to indulge and enjoy this delicious and creative Mediterranean turkey falafel burger!
