Enjoy this vibrant, fresh Herb & Walnut Chicken Salad, perfect for spring! Tender roasted chicken is paired with chopped scallions, parsley, and crisp Persian cucumbers, creating a refreshing base. The addition of celery adds crunch, while walnuts bring rich texture and healthy fats. Tossed in a light dressing of extra virgin olive oil, olive oil mayonnaise, and seasoned with turmeric, oregano, garlic, lemon, and a pinch of kosher salt and pepper, this salad is a perfect blend of fresh herbs and zesty flavors. This salad will leave you feeling nourished and satisfied.

Serves 4-6

  1. Dice the cucumbers and tomatoes, and finely dice the red onion into a medium bowl.
  2. Add chopped fresh parsley, and dried mint to the salad.
  3. Add fresh lemon juice, salt and pepper and mix to combine.
  4. Next, drizzle the olive oil over the salad and give it a final toss.
  5. Taste again for salt and pepper.
  6. Serve immediately

Directions:

  1. Preheat oven to 375 degrees.
  2. Wash and dry your chicken breasts then coat with olive oil, spices, and fresh garlic and lemon slices. Cook for 35-40 minutes or until chicken is cooked through.
  3. Meanwhile, chop all your herbs, celery, cucumber, walnuts and set aside.
  4. Once the chicken has rested and slightly cooled, give it a rough chop, and add the chicken to the food processor. Pulse until the chicken is chopped nicely, then add it to a large mixing bowl.
  5. Add the herbs and rest of your ingredients to the chicken, and toss together well with the olive oil mayonnaise.
  6. Taste for seasonings, then plate, serve, and enjoy with some fresh bread, as lettuce wraps, on top of your favorite salad, or with some crackers! So delicious!
