Drizzled with a tangy balsamic vinaigrette and balanced with the perfect amount of kosher salt and cracked pepper, this salad is both refreshing and nutrient-packed.

Serves 4-6

  1. Dice the cucumbers and tomatoes, and finely dice the red onion into a medium bowl.
  2. Add chopped fresh parsley, and dried mint to the salad.
  3. Add fresh lemon juice, salt and pepper and mix to combine.
  4. Next, drizzle the olive oil over the salad and give it a final toss.
  5. Taste again for salt and pepper.
  6. Serve immediately

Directions:

  1. Slice tomatoes and set on the base of the platter.
  2. Meanwhile, cut and prep mangos, then drizzle with olive oil and grill on high for 2 minutes on each side. Remove from heat, and let cool.
  3. Arrange next to tomatoes on the platter in between to make a pretty design.
  4. Top with crumbled feta, and fresh basil.
  5. To make the dressing, whisk together the balsamic vinegar with the extra virgin olive oil, salt, and pepper.
  6. Drizzle the dressing over the salad, serve immediately, and enjoy!
