Serves 4-6

  1. Dice the cucumbers and tomatoes, and finely dice the red onion into a medium bowl.
  2. Add chopped fresh parsley, and dried mint to the salad.
  3. Add fresh lemon juice, salt and pepper and mix to combine.
  4. Next, drizzle the olive oil over the salad and give it a final toss.
  5. Taste again for salt and pepper.
  6. Serve immediately

  1. preheat oven to 400 degrees.
  2. wash, clean, and prep chicken and pat dry with a paper towel.
  3. make saffron water: grind the saffron in the mortar and pestle. Place it in a small bowl with a few ice cubes. As the ice melts, it will “bloom” the saffron and create a delicious “liquid gold” saffron.
  4. in a small bowl, combine lemon juice with salt, pepper, turmeric, oregano, garlic powder, tomato paste, saffron water, and extra virgin olive oil.
  5. place your chicken in an olive oil lined baking dish and coat it with the marinade on both sides. Let marinade for at-least 2 hours or overnight.
  6. Then, bake the chicken thighs in the oven for 25-30 minutes or until the chicken is juicy, tender, and cooked through.
  7. serve with a salad or enjoy it with some fresh bread!
