Enjoy a healthy, flavorful snack with Labneh Zaatar Sushi Bites. Soft Arabic pita is layered with creamy labneh, fresh cucumber and tomato, drizzled with olive oil, and seasoned with zaatar and dried mint. Rolled into bite-sized pieces, these delicious bites are perfect for kids or adults as a light breakfast or snack.

Serves 4-6

  1. Dice the cucumbers and tomatoes, and finely dice the red onion into a medium bowl.
  2. Add chopped fresh parsley, and dried mint to the salad.
  3. Add fresh lemon juice, salt and pepper and mix to combine.
  4. Next, drizzle the olive oil over the salad and give it a final toss.
  5. Taste again for salt and pepper.
  6. Serve immediately

  1. Peel your arabic pita bread into two large round pieces. Lay them flat on top of each other like a venn diagram so it makes a wider area to stuff inside the pita.
  2. Spread the labneh evenly in the middle so its nice and thin, but not too thin, and not too thickly spread
  3. Add a drizzle of olive oil, and salt
  4. Next, add your slices tomatoes and cucumbers on top of the labneh. Season again with a little more salt, then add the zaatar all over the pita and vegetables
  5. Fold a half inch piece over on each the right and left side, then tuck and roll the pita tightly like you would with a sushi roll.
  6. Carefully cut the ends off, then begin slicing into one inch pieces. 
  7. Plate and sprinkle with a little more olive oil and zaatar, and enjoy!
