This Herb & Parmesan Roasted Boneless Turkey is perfect for a flavorful, Mediterranean-inspired Thanksgiving or any special occasion. Marinated overnight with freshly grated parmesan, lemon zest, rosemary, thyme, oregano, and plenty of extra virgin olive oil, each bite is infused with vibrant, savory flavors. After marinating, it roasts beautifully in under an hour, resulting in a tender and juicy turkey that’s both simple and elegant. It’s a dish that brings together ease, beauty, and mouthwatering flavor – the ideal centerpiece for a memorable, healthy meal.

Serves 4-6

  1. Dice the cucumbers and tomatoes, and finely dice the red onion into a medium bowl.
  2. Add chopped fresh parsley, and dried mint to the salad.
  3. Add fresh lemon juice, salt and pepper and mix to combine.
  4. Next, drizzle the olive oil over the salad and give it a final toss.
  5. Taste again for salt and pepper.
  6. Serve immediately

  1. The day before, prep you turkey by washing it and patting it dry. Then marinate it using the following ingredients:
  2. Mince your fresh herbs, and add them to a bowl with the parmesan, lemon juice, lemon zest, salt, pepper, and extra virgin olive oil. Mix together and get ready to rub all over the turkey
  3. Take your turkey, and place the marinate in between the skin and meat, and on top of the skin and rub it all over the turkey breast. 
  4. Cover and place in the refrigerator to marinate overnight.
  5. On the day of, start by preheating your oven to 350 degrees. 
  6. Take your turkey out of the refrigerator and allow to come down to room temperature for 30 minutes before placing it into the oven.
  7. Place your turkey on a baking rack, and place it in the oven.
  8. Roast until the internal temperature reads 165-170 degrees. 
  9. Rest for 15 minutes and then slice into the turkey and serve right away.
