Bring a large pot of water to boil, and add a healthy pinch of kosher salt to flavor the water
Meanwhile, grate your parmesan cheese into a bowl and set aside
When the water comes to a boil, add your pasta and give it a mix.
When the pasta is almost finished, take 1 1/2 cups of pasta water and reserve on the side for the cacio e pepe sauce.
In a large saucepan on medium-high heat, add your extra virgin olive oil, then the black pepper.
Toast the pepper in the olive oil for 2 minutes, then add your reserved pasta water to the pan.
Add all of the parmesan cheese to the pan and whisk inside of the liquid, this will all happen very quickly!
When the pasta is cooked, place it directly into the sauce and mix together so that the sauce coats all of the pasta
Serve right away, and top with more grated parmesan and a sprinkle of chopped parsley.
