Step 1: Activate the Yeast
In a large bowl, combine the warm water, warm milk, sugar, and yeast. Let stand for 10 minutes until foamy.
Step 2: Make the Dough
Add the flour and salt. Mix until you have a smooth, sticky dough.
Step 3: Proof the Dough
Cover the bowl and proof until the dough is bubbly and roughly doubled in size.
Miele Proof Mode: 45–60 minutes
Step 4: Heat the Oil
Heat the neutral oil in a deep, heavy pot.
Miele Induction Cooktop: 350°F (175°C)
Step 5: Fry the Loukoumades
Drop walnut-sized portions of dough into the hot oil. Fry for 2–3 minutes, turning frequently, until puffed and golden on all sides. Work in batches so the pot isn’t crowded.
Step 6: Drain
Transfer the loukoumades to paper towels or a wire rack to drain.
Step 7: Make the Honey Syrup
In a small saucepan, combine the thyme honey, water, cinnamon stick, orange zest, and lemon peel. Warm gently for 5–8 minutes. Do not boil.
Step 8: Serve
Arrange the warm loukoumades on a platter and drizzle generously with the honey syrup. Finish with ground cinnamon, toasted pistachios, toasted walnuts, toasted sesame seeds, and fresh orange zest. Serve immediately with vanilla bean ice cream.
