Mediterranean Diet Recipes

Treat your taste buds and nourish your body with this wholesome 30-minute meal. Made with brown rice and quinoa fusilli (available at Trader Joe’s), this dish combines the goodness of Albacore tuna, sliced almonds, and green peas, creating a meal that’s as nutritious as it is flavorful. Rich in vitamins, antioxidants, and healthy fats, it’s the perfect balance for everyday health. The dish is elevated with the aromatic sizzle of ghee butter and almonds, bringing a rich, nutty flavor to the pasta. Topped with a refreshing squeeze of fresh lemon juice and the creaminess of whole milk yogurt, this meal delivers both comfort and nutrition. Whether for a quick lunch or a light dinner, this dish is a favorite in my husband’s home—and will soon be one in yours too.

Serves 4-6

  1. Dice the cucumbers and tomatoes, and finely dice the red onion into a medium bowl.
  2. Add chopped fresh parsley, and dried mint to the salad.
  3. Add fresh lemon juice, salt and pepper and mix to combine.
  4. Next, drizzle the olive oil over the salad and give it a final toss.
  5. Taste again for salt and pepper.
  6. Serve immediately
  1. Bring a large pot of water to boil, add a good bit of salt, then the pasta to the water, stir, and let cook until al dente.
  2. Meanwhile, in a large mixing bowl, combine plain yogurt (and liquids) with garlic, lemon, tahini, salt & pepper. Season to taste, and if it needs more salt or more lemon, feel free to adjust to your liking!
  3. In another bowl, add the rinsed tuna, and season with a bit of lemon juice, olive oil, salt & pepper. Set aside for the final step.
  4. When the pasta is about finished, add the peas to the water for a minute, and then drain your pasta and peas into a colander and quickly rinse it, maintaining heat in the pasta.
  5. Add the mixture to the large bowl with your yogurt sauce mix to combine. It should be saucy and the yogurt should be completely coating all the pasta.
  6. Top the pasta evenly with the tuna mixture.
  7. Meanwhile with a small pan on medium heat, add your ghee butter until it is completely melted, then add your almonds. Cook and stir until golden brown.
  8. Pour ghee butter/almond mixture all over pasta and tuna.
  9. Serve, and enjoy!
