Enjoy these heart-healthy Wild Caught Mahi Mahi Tacos, seasoned with cardamom, oregano, paprika, and black pepper. Grilled to perfection and served on whole grain tortillas, they’re topped with smoky charred tomato salsa, creamy avocado slices, and crunchy cilantro cabbage slaw. A squeeze of fresh lime and a drizzle of extra virgin olive oil add the perfect finishing touch to this flavorful and nutritious meal.

Serves 4-6

  1. Dice the cucumbers and tomatoes, and finely dice the red onion into a medium bowl.
  2. Add chopped fresh parsley, and dried mint to the salad.
  3. Add fresh lemon juice, salt and pepper and mix to combine.
  4. Next, drizzle the olive oil over the salad and give it a final toss.
  5. Taste again for salt and pepper.
  6. Serve immediately

For Hollandaise Sauce:

Directions for Salsa:

  1. broil your tomatoes and onions for 10-15 min or until charred.
  2. add to a blender with 3/4 bunch of cilantro, 3 limes, 1 tbsp salt, pepper, and jalapenos.
  3. blend until smooth like salsa or chunky if you like it that way!

Grilled Mahi Mahi:

  1. cut your Mahi into 1/2 inch cubes.
  2. marinate the fish for 30 minutes with the juice of 1 lime, your spices, and olive oil.
  3. grill on high heat until perfectly cooked (just a few minutes) squeeze some more lime on top when finished for extra flavor

Cabbage slaw:

  1. in a bowl, mix your cabbage slaw with a 1/4 cup chopped cilantro, 1/4 white onion, and the juice of one lime. Add 1 tsp salt and a little pepper. Mix together and it’s done!

Taco Assembly:

  1. warm up your tortillas on the grill or in the oven for a minute.
  2. place the grilled mahi mahi on the bottom of the taco, then top with fresh salsa, cabbage slaw, and fresh avocado slices.
  3. serve and enjoy!
