Serves 4-6

  1. Dice the cucumbers and tomatoes, and finely dice the red onion into a medium bowl.
  2. Add chopped fresh parsley, and dried mint to the salad.
  3. Add fresh lemon juice, salt and pepper and mix to combine.
  4. Next, drizzle the olive oil over the salad and give it a final toss.
  5. Taste again for salt and pepper.
  6. Serve immediately

  1. In a small bowl, mix the goat cheese with the milk salt and pepper with a fork or whisk until smooth. Add a bit more milk if too thick. Season accordingly if necessary with a little more salt. Add to a piping bag or ziplock bag to pipe into the dates.
  2. Remove the pit from the dates and arrange them on a serving dish. Stuff each date with the goat cheese mixture.
  3. Top each date with a little chopped walnut, pomegranate, and minced rosemary.
  4. Serve & enjoy!
