This quick and nourishing Tomato Basil Chicken & Rice Soup is the perfect comfort meal for any day, especially when you’re feeling under the weather. Made with fresh tomatoes, fragrant basil, tender rotisserie chicken, and basmati rice, this recipe is both flavorful and wholesome. Simmered in vegetable or chicken broth with a touch of olive oil, onion, salt, and pepper, it’s a simple yet satisfying dish that delivers warmth and comfort in every bowl. Ideal for a quick weeknight meal or to soothe someone who needs a little extra care.

Serves 4-6

  1. Dice the cucumbers and tomatoes, and finely dice the red onion into a medium bowl.
  2. Add chopped fresh parsley, and dried mint to the salad.
  3. Add fresh lemon juice, salt and pepper and mix to combine.
  4. Next, drizzle the olive oil over the salad and give it a final toss.
  5. Taste again for salt and pepper.
  6. Serve immediately

  1. Sauté onions in olive oil on medium heat until tender
  2. Add rice to the pan and toast the rice until browned
  3. Add grated tomatoes, some salt and pepper, and cook for a few minutes
  4. Add chicken, then broth, and bring to a boil
  5. Turn the heat on low and cover the pot
  6. After 20 minutes, rice should be cooked. Add a little bit of broth if it’s too thick, and then add the fresh basil
  7. Enjoy!
