Enjoy a comforting bowl of White Bean & Kale Ginger Soup, packed with hearty white beans, fresh kale, and zesty ginger. Infused with flavorful spices like cumin and turmeric, this soup is finished with a touch of lemon juice for brightness and extra virgin olive oil for richness. Simple to make, this wholesome dish offers a perfect balance of nutrition and Mediterranean flavors, ideal for a light lunch or cozy dinner.

Serves 4-6

  1. Dice the cucumbers and tomatoes, and finely dice the red onion into a medium bowl.
  2. Add chopped fresh parsley, and dried mint to the salad.
  3. Add fresh lemon juice, salt and pepper and mix to combine.
  4. Next, drizzle the olive oil over the salad and give it a final toss.
  5. Taste again for salt and pepper.
  6. Serve immediately

  1. Preheat your pot to medium heat, add the olive oil, and begin to sauté the onions for a few minutes, and then add your ginger and garlic with one more drizzle of olive oil.
  2. Add kale to the pot and cook and stir so it cooks down. Add a dash of salt, pepper, and turmeric, and once it cooks down add a splash of lemon juice.
  3. Then add your rinsed white beans and whole peeled tomatoes and stir together. Add a dash more of salt and pepper.
  4. Add the vegetable broth to the pot and bring to a boil. Once it comes to a boil, cover and simmer on medium low for 30 minutes.
  5. Turn off the heat and add a dash of cumin and a squeeze of fresh lemon juice, and salt if necessary.
  6. Let cool slightly, and enjoy!
